Abstract

Tajriba oddiy sharoitida to‘rt marta ishlov berish bilan shakarsiz meva murabbosiga saqlashning ta’sirini baholash uchun o‘tkazildi. Tekshiruv davomida tayyorlangan murabboning hissiy sifati, fizik-kimyoviy va saqlash muddati 30 kundan 120 kungacha bo‘lgan
vaqt oralig‘ida tahlil qilindi. O‘rganilayotgan barcha muolajalar mahsulotning hissiy fazilatlari, fizik-kimyoviy va saqlash muddati bo‘yicha sezilarli o‘zgarishlarni ko‘rsatmadi. Natijalar asosida T3-shakarsiz aralashtirilgan mevali murabbo boshqa muolajalarga qaraganda past kaloriyali va umumiy maqbullikka ega bo‘lganligi aniqlandi. Barcha tayyorlangan shakarsiz murabbolarning saqlash muddati 90 kungacha bo‘lgan saqlash muddatiga ruxsat berilgan.
